Where did the edge inscription 'standing on the shoulders of giants' come from?

The inscription comes from a 1675 letter written by Sir Isaac Newton: ‘If I have seen further, it is by standing on the shoulders of giants.’ It was chosen for the £2 coin to represent technological progress and achievement.
